I carefully saved an unopened quart of milk, letting it go sour, but not yet curdled. So, over the past two days, then, the FlasterQat and I have had potato soup, biscuits and milk gravy, and smash-ed potatoes, all made with sour milk. There's a great deal to be said for southern poor people's food :)

Smashed potatoes! I wonder if thats the same as what we lot in the UK called mashed potatoes.

Similar, except that you say the name in a 'Dexter's Laboratory' way.

You could also have purchased cultured buttermilk to achieve the same effect, but I suppose it wouldn't have been quite so much fun. :)

I used to have cornbread and buttermilk two or three times a week when my grandma was still with us. We weren't rich in monetary terms, but her cooking was enough to make us all feel rich in that we got to enjoy the products of her love of both cooking and of her family. I could expound on her fig preserves, chocolate pies, and Mississippi Mud cake for far longer than anyone would wish to listen. She also made some terrifically good fried okra, though I never have been a fan of "slick, slimy boiled okry" (props if you can identify the source of that quote; the way that gentleman said it always tickled my risibilities). ;)

One of my other favorite "poor Southern folks" foods is collard greens with homemade pepper sauce (the liquor of chili peppers steeped in vinegar). It's a side dish that's very much good for the bod as well as the palate; it's low-Calorie and chock-full of excellent nutrients from those deep-green leafy veggies. :9

I'll pass on the poke salad, though. Too much risk of it being a Last Supper.

Cornbread and buttermilk was one of Elvis's favorites. He called it 'soaks.' Less famous than the peanut butter and banana sandwiches, but I tried it once last year and it was really really good.

Soaks, eh? Good name for it. I need to learn how to make cornbread so I can enjoy that again... it's been far too long since I've had a good old-fashioned bowl of cornbread crumbles in buttermilk. These days, I'd consider it a comfort food and not feel too bad about eating it thanks to it also being a good-for-the-body snack.
