Boiled Meatloaf
Oct. 10th, 2019 12:29 pmSo, the oven has broken, and isn't yet fixed. The maternal parent and I bemoaned our misfortune, as we wanted meatloaf. Thus was born: Boiled Meatloaf!
It actually turned out pretty good. Basically, one makes a rather dry, stiff meatloaf (I use breadcrumbs and egg for binder), and forms it into a sort of loaf-shaped mass. Having done that, wrap it in cheesecloth like a boiled pudding to get it to hold its shape, and boil it in broth (water would work, but broth is better) for an hour or so. Unwrap it, pat the top dry, and brush it with ketchup. Use the brule torch to get that kind of burnt-tomato crust on top that meatloaf needs. Good, juicy meatloaf! I'll certainly do that again,and see if I can't perfect it.
